Paleo Flourless Chocolate Cake

18 ounces chocolate (usually a package and a half of chocolate chips)
1 cup coconut oil
3/4 cup real maple syrup
1/4 teaspoon Salt
1/4 teaspoon vanilla extract
6 Eggs

Set oven to 300 degrees.

Put the chocolate and coconut oil in a microwave safe bowl and zap it for 30 seconds at a time stirring at each interval until the chocolate is completely melted -- about 2 minutes total.

Remove bowl from microwave and beat in the maple syrup, salt, and vanilla. Beat in the eggs, one at a time, until fully mixed.

Grease and dust a 9 inch cake pan and pour mixture in. Bake for about 1 hour, or until the cake is set. It will look kind of like a cheesecake and won't move when jiggled.

Let it cool until room temperature and then stick it in the fridge or freezer until cool to the touch. Slice it using a hot knife and enjoy.

This cake is so rich and delicious, and totally guilt-free. You'll want to eat it as soon as it comes out of the oven, but wait. It's worth it.

I have it pictured with "ice cream" and raspberries. The ice cream is made by throwing frozen bananas in a blender and letting it rip. That's it. Whipped frozen bananas. So good!
